Twice Baked Cheesy Mashed Potatoes |

| I love cheese and this recipe is an excellent use of leftover mashed potatoes, too. It's also good to use shrimp instead of the bacon. :-) 1/2 cup chopped onion, optional
1 Tbsp. vegetable oil
4 cups mashed potatoes (prepared with milk and butter)
2 cups shredded Cheddar cheese, divided
1/4 cup crumbled cooked bacon
Salt and pepper, to taste
Saute chopped onion in oil until tender. Combine the sauteed onion, mashed potatoes, 1 cup cheese, bacon, salt and pepper in a large bowl. Spoon mixture into a baking dish and sprinkle with remaining cheese. Bake uncovered at 350 degrees F. for 20-25 minutes or until cheese is melted. |
