Sweet Potato Souffle |

| 1 large can of sweet potatoes (drained and mashed)
1 scant cup sugar
2 eggs
1/2 cups milk reg or 2 %
1/2 teaspoon salt
1/3 stick margarine , melted
1 tsp vanilla
mix well, pour into a buttered dish (1 1/2 Qt. pyrex)
TOPPING
1 cup light brown sugar
1/2 cup flour
1/3 cup melted butter
3/4 cup pecans (crushed into small pieces
crumble over potato mixture
bake 350degrees for 35 to 45 minutes. uncovered I cook about a 1 1/2 lbs. of peeled sweet potatoes and mash them. |
