| Sweet Potato Casserole
4 or 5 medium/large sweet potatoes, peeled, cooked and drained
2 eggs beaten
1 tsp vanilla
2/3 cup milk
1/2 cup soft butter or margarine
1 cup sugar
Topping:
1 cup brown sugar
1/3 cup flour
1/3 cup chopped pecans (or whatever nut you have, walnuts, hickory nuts, etc.)
Directions
Mix all ingredients above with a hand masher, not electric mixer. Pour into a 9 x 13 inch baking pan. Then put on topping.
For the topping: mix all topping ingredients. Crumble on top of sweet potato mixture. Bake 350 degrees F for 45 minutes.
Note: If you don't like nuts or are allergic, I have substituted old fashioned oats before. It is still good. I used 3/4 - 1 cup oats. |
