Being that I am pretty lazy anymore, I cube the pototoes ,boil them till almost soft ,add chopped onions, seasoning. Cook some more, add milk. Thicken the soup with instant mashed potatoes. Done.

Ok Here Is My Recipe..my Husband Loves It And It Is Easy.
3 Tbsp. Oleo
1 Large Onion Chopped
3 Tab. Flour
6 Cups Water(reserve One Cup)
Salt And Pepper To Taste
4 Cup Diced Potatoes
1/2 Cup Half And Half
2 Tab. Dried Or Fresh Parsley
Carrot
Celery
Chicken Bouillon Cubes Or Paste
Melt Oleo, Stir In Onions. Simmer 5 Minutes But Do Not Brown. Blend In Flour And Stir For 2 Minutes. Remove From Heat And Mix In The One Cup Of Water. IT WILL BE LUMPY BUT IT ALL EVENS OUT IN THE COOKING.Add Flour Mixture To Remaining 5 Cups Of Water In Soup Pot. Add Salt And Pepper , Parsley And Potatoes. For Extra Color, I Grate A Little Carrot In The Soup And Add Some Chopped Celery Or Celery Leaves. I Add A Couple Chicken Bouillon Cubes And Let Cook Till Potatoes Are Tender. Turn Off Heat And Add Half And Half. I Usually Add 3/4 Cup Instead Of 1/2 Just To Make It Richer. My Friends Use Milk And It Just Doesn't Have The Rich Taste.
If You Like You Can Add An Additional Boullion If Needed. This Is Even Better The Next Day. I Usually Double This Recipe.

Oooooooh, these recipes do sound good! I'll have to try them too. I just make my potato soup with potatoes, onion powder, garlic powder, salt, pepper, flour & water. These recipes sound much better! :thanks: for sharing them everyone.
Hugs, Paula
