Pea Salad

This is a nice salad when it's hot out or if you just want something different. We make it quite a bit in the summer at our house.



PEA SALAD



3-4 cups frozen peas

1 cup grated cheddar cheese

1/8 to 1/4 cup diced onion

2-3 tsp. prepared mustard

1/2 cup mayonnaise



Rinse the peas under cold water until thawed. Drain. In a large bowl, combine peas, onion and cheese. Add mustard and mayo and mix well. Refrigerate until serving.



I often use a combo of grated cheeses. This is a nice take-along for a picnic or potluck.
