Make sure he gets yellow cornmeal...it's better IMHO!



Corn Bread on the back of my Indian Heal Corn Meal pack!



1 cup yellow cornmeal

1 cup sifted flour

1/4 cup sugar

3 tsp baking powder

1tsp salt

1/4 cup soft shortening

1 cup milk

1 egg, beaten

Preheat over to 425° F.

Combine cornmeal, flour, sugar, baking powder and salt in a bowl. Cut in shortening. Mix egg and milk together and add to dry ingredients with a few swift strokes.

Now here's the trick...pour a little veggie oil in your skillet, stick it in the oven for a few minutes....while you're mixing the ingredients. Take it out swirl around the oil to coat the skillet. Pour in the batter into the hot skillet.

Bake 15-20 minutes. Might take a little longer, I've got a mold and I don't remember how long it took in the skillet. Just test after 15 minutes to see.

Default Southern cornbread

Southern Cornbread

1 10" iron skillet

2- 1 1/2 cup self-rising cornmeal

3- 1 large cackle-apple (egg)

4- 1/2- 3/4 C milk/buttermilk*

5- 2 Tbls. of bacon grease

Heat oven to 450 F. Place bacon grease in iron skillet to melt. heat skillet/ must be hot to keep bread from sticking.

dust bottom & sides of skillet w/cornmeal. lightly beat egg w/a little milk. *use a smidgeon of baking soda if you use buttermilk*.

you won't need the baking soda if you use sweet milk.

mix the cornmeal,egg/milk well. the batter should be fairly thin or soupy, but not too thin.pour melted bacon grease in batter & mix well. if you would like you can also add some fresh cracklin's to the batter. bake @ 450 (hot oven) for 20- 30 min, until top is golden brown.

when bread is done, pour yourself a cold glass of sweet or buttermilk; cut a large slab of bread, find a nice quiet place
