| This time of year, we are all combing the ditches for wild asparagus! Those of us who love it just can't get enough. Today at work one of the girls brought this casserole and it was so delicious I had to ask for the recipe...
Asparagus Casserole
1 pkg. stuffing mix (Stove-top or it's equivalent)
1 1/2 cup very hot water
Mix together and let stand 5 minutes.
1 can cream of celery soup
1/2 cup milk
3 cups ham ~ cut into small chunks
18 spears asparagus ~ cut up into bite size pieces
pepper to taste (no salt is needed)
1 cup shredded swiss cheese
Mix these ingredients together and put in a casserole. Top it with the dressing, cover and bake at 350* for about 45 minutes.
My friend says she adds a little extra of the cheese to top the dish before baking. She also says she prefers the off brands of stuffing to the Stove-Top because they contain less salt! |
