| My family loves these potatoes
If you have a shell or two tear up when your scooping out the potato... it doesn't matter...[just put all the mixture into a 9"x13" pan without the skins & bake as usual. I hope you'll enjoy them
Twice Baked Potatoes
4-6 Baking Potatoes
2 cans Shrimp or Crab*
1 pint Sour Cream
Margarine or Butter to taste
Grated Cheese
Cajun Seasoning to taste
Bake the potatoes as usual. Slice lengthwise and scoop out the center into a bowl. Add shrimp or crab, sour cream, margarine or butter, & cajun seasoning to potatoes and mix well. Put back into shells, top with grated cheese then put into a 350F oven or into microwave until cheese melts.
*I use a 12oz. package of cooked, drained, chopped bacon in place of the shrimp or crab. You could probably use ready to eat crab meat or frozen shrimp, thawed |
