Mushroom Quesadillas |

| 2 tb. extra virgin olive oil
2 c. fresh mushrooms
1 tsp. dried thyme
salt and pepper to taste
4 tortillas
2c. shredded cheddar
-Saute mushrooms in olive oil.
-Season with thyme, salt and pepper.
-Set mushroom mixture aside.
-Warm tortilla on skillet and cover 1/2 tortilla with mushrooms and shredded cheese.
-Fold tortilla closed and finish cooking. Serve hot! (repeat with remaining tortillas) |
