| CHICKEN ALFREDO LASAGNA
2 Pound Chicken Thighs, boneless skinless
1 tsp Italian Spice blend
˝ Cup Yellow Onion, diced
2 Garlic Cloves, crushed
2 Tbsp Olive Oil
1 package Lasagna noodles (cooked according to directions on box)
16 Oz Alfredo Sauce
2 Tbsp Fresh Basil, chopped
2 Cups Ricotta Cheese
2 Cups Grated Mozzarella
1 Cup Freshly Grated Parmesan Cheese
Fresh parsley and basil
Cut up chicken and mix with Italian spices, salt and pepper.
In the Olive Oil sauté the onions and garlic until tender. Add the chicken and cook for a few minutes or until slightly golden. In a bowl mix the chicken with the ricotta, half the Alfredo sauce, basil and half the mozzarella. In a casserole dish that has been previously oiled, place a layer of noodles and spread half of the mixture. Cover with another layer of noodles and spread the remaining cheese and chicken mix. Cover with the remaining noodles and spread the rest of the Alfredo sauce. Sprinkle the rest of the cheeses on the top. Bake in a preheated 350 degree oven for 35 to 45 minutes or until internal temperature reaches 165 degrees. Serve warm with fresh basil and parsley. |
