Lime Chicken Tacos (in Crock Pot) |

| This recipe is from "Simple and Delicious" magazine. I've only made it once--but Aaron said he couldn't get enough of it! And, depending on what toppings you use, it can be really low-fat and healthy.
1 1/2 lbs. boneless skinless chicken breasts
3 Tbl. lime juice
1 Tbl. chili powder
1 cp. frozen corn
1 cp. chunky salsa
12 flour tortillas
Sour cream, shredded cheddar cheese, shredded lettuce, etc. (optional)
Place chicken in 3-qt. slow cooker. Combine lime juice and chili powder; pour over chicken. Cover and cook on low for 5-6 hours or until chicken is tender.
Remove chicken; cool slightly. Shred and return to the slow cooker. Stir in corn and salsa. Cover and cook on low for 30 minutes or until heated through. Serve in tortillas with sour cream, cheese, lettuce, (or any other favorite taco toppings), if desired. Yeild: 12 tacos |
