i just got this from the net..lolz
A hot and spicy green Curry Soup with Chicken
Take:
2 tbsp peanut oil
2 cloves garlic, minced
1 carrot, peeled and diced
2 (14 ounce) cans coconut milk
2 tbsp green curry paste
4 chicken breast halves - cubed
1l chicken stock
2 limes, juiced
1 chopped green onion
Method:
Heat the oil in a saucepan, over a medium heat, then fry the carrots and garlic until the carrots are just beginning to cook.
Add half a can of the Coconut milk, then brig to the boil, stirring constantly, before adding the Curry Paste
Add the Chicken, and stir to coat, then reduce the heat and add the chicken stock and heat through
Stir in the remaining coconut milk, and the lime juice and green onions, then allow to cool for 10 minutes, then serve.
