| BROCCOLI-CHICKEN-CHEESE CASSEROLE

1 1/2 to 2 lbs. fresh broccoli or 2 pkgs. (10 oz. each) frozen broccoli spears, thawed
Boiling water
1 1/2 to 2 c. cooked chicken, cut in strips
1/4 c. butter
1/4 c. flour
1/4 tsp. salt
2 chicken bouillon cubes, dissolved in 2 c. hot water
1 1/2 c. shredded Cheddar cheese
1 tsp. Worcestershire sauce
Cook broccoli until tender, drain and arrange in 12 x 8 x 2 inch baking dish. Sprinkle with chicken; set aside. In saucepan melt butter, blend in flour and salt until smooth and bubbly. Stir over low heat until thickened. Remove from heat and stir in 1 cup cheese and the Worcestershire sauce until cheese melts. Pour over chicken and broccoli. Sprinkle with remaining 1/2 cup cheese, if desired. Bake in preheated 400 degree oven 20 minutes or until hot. Makes 4 to 6 servings |
