| Justs thought I'd share one I tried the other day. I saw something similar on one of the cooking shows, didn't write it down, and ended up with my own variation. But it's tasty and easy although the finished dish LOOKS complicated and attractive.
Ingredients:
Olive oil or other cooking oil
Penne pasta
1 Pint cherry tomatoes, all cut in half
small onion
2-3 cloves of garlic (depending on your taste)
medium bell pepper, cut in long strips
salt and pepper
oregano
red wine (I always use the cheap stuff for cooking)
While the pasta is cooking: Heat small amount (a couple tablespoons) of olive oil in a large skillet. Add garlic and onion; allow to lightly brown. Add the bell pepper and tomatoes (you're using a medium low heat at this point). The tomatoes will start to juice a little; add a couple teaspoons of salt. This will encourage them to sweat and release more juices. Add about a cup of water from the penne water, then drain and add cooked penne and (optional) about a half cup wine. Season with pepper and oregano to taste. Remove from heat, toss well and serve. This is really easy! |
