Salsa Chicken With Lemon Pepper Rice |

[img]images/smiley_icons/oh yes.gif[/img] You can cook it in a slow cooker or it can be made in a little over an hour. My family loves it and requests it often! <font color="deeppink"><font size="3">Salsa Chicken
6 Chicken Breast (boneless, skinless)
you can also use boneless, skinless breast strips
16 oz. chunky salsa
2 Tablespoon Canola Oil (I use nonstick spray)
Lightly brown chicken on each side, then pour salsa over the chicken. I usually pour a small amount of salsa in the bottom of the pot then pour the rest on top of the chicken. Cover and cook on top of the stove for 30-35 minutes or until done. (I cook this in a cast iron dutch oven. [img]images/smiley_icons/1luvu.gif[/img]) </font></font>

6 Cups Water
2 or 2 1/2 Tablespoons Lemon Pepper Seasoning
2 Cups Rice
(You could use instant rice)
Bring water and lemon pepper seasoning to a boil, add rice. Bring back to a boil, lower heat to a simmer, cover and cook for 20 minutes or until all the water is absorbed. Make sure the water doesn't cook out too quickly or your rice won't be done.</font></font> |
