BANANA CHEESE CAKE



8-oz. cream cheese

16-oz. cool whip

1 pkg. instant banana pudding

graham cracker crust

3 bananas



Cream 8-oz. cool whip and softened cream cheese together and press on graham cracker curst. Slice bananas and put on top of cream cheese mix. Make pudding as directed and mix 8-oz. cool whip with it. Put on top of bananas...chill 1 hour.

Layered Banana Pineapple Dessert



1 1/2 cups graham cracker crumbs (We like the cinammon graham crackers) and it is good with those.

1/4 cup sugar

1/3 cup margarine or butter, melted

3 bananas, sliced

l - 8oz. pkg. cream cheese, softened

3 1/2 cups cold milk

2 pkgs. (4 serving) Vanilla Flavor or French Vanilla <font size="2">Instant </font>Pudding and Pie Filling

1 - 20oz. can crushed pineapple, drained

1 - 8oz. tub Cool Whip



Mix graham cracker crumbs, sugar and margaine in 13 x 9 pan. Press evenly onto bottom of pan. Arrange banana slices on crust.



Beat cream cheese in large bowl until smooth. Gradually beat in milk. Add pudding mixes. Beat until well blended. Spread evenly over banana slices. Spoon pineapple evenly over pudding mixture. Spread whipped topping over pineapple. Garnish with sliced bananas. (opt) Enjoy!!! [img]images/smiley_icons/oh yes.gif[/img]

<u>Banana Whip</u>





4 cups miniature marshmallows

1 cup milk

1 cup whipping cream, whipped (or sub. Cool Whip)

1 cup diced ripe bananas

1/2 teaspoon vanilla extract

1-1/3 cups graham cracker crumbs

4 Tablespoons finely chopped walnuts



In a medium saucepan, combine marshmallows and milk. Cook and stir over low heat until marshmallows are melted. Remove from the heat and let cool. Fold in whipped cream. Add banana and vanilla. Spread crumbs in the bottom of 4 serving dishes. Top with the banana mixture. Sprinkle with nuts. Chill for at least 30 minutes. Makes 4 servings. [img]images/smiley_icons/chef.gif[/img]

<u>Layered Pudding Dessert</u>





1 cup crushed vanilla wafers, divided

1 package (3 ounces) cook and serve vanilla pudding mix

2 medium ripe bananas, divided

1 package (3 ounces) strawberry gelatin

1 cup whipped topping





Spread half of the crushed wafers in the bottom of a greased 8 inch square pan. Prepare pudding mix according to package directions; spoon hot pudding over crumbs. Slice one banana; place over pudding. Top with remaining crumbs. Chill for 1 hour. Meanwhile, prepare gelatin according to package directions; chill for 30 minutes or until partially set. Pour over crumbs. Slice the remaining banana and place over gelatin. Spread whipped topping over all. Chill for 2 hours. Makes 9 servings. [img]images/smiley_icons/chef.gif[/img]

This could be a bit of work but it looks yummy!





<u>Banana Split Supreme</u>



3/4 cups butter or margarine, divided

2 cups powdered sugar

1 cup evaporated milk

3/4 cup semi-sweet chocolate chips

24 cream filled chocolate sandwich cookies, crushed

3-4 medium firm bananas, cut into 1/2 inch slices

2 quarts vanilla ice cream, softened, divided

1 can (20 ounce) crushed pineapple, drained

1 jar (10 ounce) maraschino cherries, drained and halved

3/4 cup chopped pecans

Whipped topping





In a saucepan, combine 1/2 cup of the butter, sugar, milk and chocolate chips. Bring to boil over medium heat; boil and stir for 8 minutes. Remove from the heat and cool completely. Meanwhile, melt the remaining butter; toss with cookie crumbs. Press into a lightly greased (or sprayed) 13 x 9 pan. Freeze for 15 minutes. Arrange banana slices over top of crust; spread with 1 quart of ice cream. Top with 1 cup of the chocolate sauce. Freeze for 1 hour. Refrigerate remaining chocolate sauce. Spread the remaining ice cream over dessert; top with pineapple, cherries and pecans. Cover and freeze for several hours or overnight. Remove from freezer for 10 minutes before serving. Reheat the remaining chocolate sauce. Cut dessert into squares; serve with chocolate sauce (cooled) and whipped topping. [img]images/smiley_icons/chef.gif[/img]

<u>Strawberry Banana Split Cake</u>





Crust

2 cups graham cracker crumbs (about 32 squares)

1/2 cup butter or margarine, melted

1/4 cup sugar



Filling

1/2 cup butter or margarine, softened

2 cups powdered sugar

1 Tablespoon milk

1 teaspoon vanilla extract

3 large firm bananas, cut into 1/4 inch slices

2 cans (8 ounce each) crushed pineapple, drained

2 quarts fresh strawberries, sliced



Topping

2 cups whipped cream

1/4 cup powdered sugar

1-1/2 cup chopped nuts



Combine the crumbs, butter and sugar; press into an ungreased 13 x 9 pan. Chill for 1 hour. In a mixing bowl, cream butter, powdered sugar, milk and vanilla. Spread over crust; chill for 30 minutes. Layer with bananas, pineapple and strawberries. For topping, in a small mixing bowl, beat cream until soft peaks form. Add powdered sugar; beat until stiff peaks form. Spread over fruit. Sprinkle with nuts. Chill until ready to serve.

[img]images/smiley_icons/shrug.gif[/img] [img]images/smiley_icons/smlylaugh2.gif[/img] [img]images/smiley_icons/smlylaugh2.gif[/img] [img]images/smiley_icons/smlylaugh2.gif[/img] It kind of combines this week and next week's topic. My hubby loves desserts, but he is diabetic and it has gotten so bad that he is threatened with having to go on insulin. I am trying to help him maintain some sort of healthy eating lifestyle. Sometimes I have to get a little inventive. <font color="blue"><font size="3">Strawberry-Banana Fruit Salad



2-3 large bananas



2-3 large oranges



2-3 large apples



1 C seedless grapes, red or white



1/2-1C fresh berries



1/4 C or more chopped walnuts



1-6oz Light, Non-Fat, Strawberry-Banana Yogurt



Artificial sweetner if desired



Peel, remove all seeds, and coarsely chop fruit. Stir in yogurt and chopped walnuts, and sweetner. You have to adjust the amount of sweetner, if any, to your taste. Fresh blueberries are also delicious in it. Refrigerate and enjoy! [img]images/smiley_icons/smile.gif[/img] </font> </font>

Banana Split Bread



1/2 cup butter or margarine, softened

1 cup sugar

1 egg

1 cup mashed ripe bananas (about 2 large)

3 Tablespoons milk

2 cups all purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1 cup (6 ounces) semisweet chocolate chips

1/2 cup chopped pecans



In a mixing bowl, cream butter and sugar; beat in egg. In small bowl combine bananas and milk. Combine flour, baking powder and baking soda; add to creamed mixture alternately with banana mixture. Fold in chocolate chips and pecans. Pour in greased 9x5 loaf pan. Bake at 350 degrees for 60-70 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

Frosted Banana Bars



1/2 cup butter or margarine, softened

1-1/2 cup sugar

2 eggs

1 cup (8 ounces) sour cream

1 teaspoon vanilla extract

2 cups all purpose flour

1 teaspoon baking soda

1/4 teaspoon salt

2 medium ripe bananas, mashed (about 1 cup)



Frosting

1 package (8 ounce) cream cheese, softened

1/2 cup butter or margarine, softened

2 teaspoons vanilla extract

3-3/4 - 4 cups confectioners' sugar



In a mixing bowl, cream butter and sugar. Add eggs, sour cream and vanilla. Combine flour, baking soda and salt; gradually add to the creamed mixture. Stir in bananas. Spread into greased 15x10x1 inch baking pan. Bake at 350 degrees for 20-25 minutes or until toothpick inserted near the center comes out clean. Cool. For frosting: in a mixing bowl, beat cream cheese, butter and vanilla. Gradually beat in enough confectioners' sugar to acheive desired consistency. Frost bars. Store in the refrigerator.

Banana Split Brownie Dessert



3/4 cup shortening, melted

1/4 cup butter or margarine, melted

3/4 cup baking cocoa

2 cups sugar

4 eggs, beaten

1 teaspoon vanilla extract

1-1/2 cups all purpose flour

1 teaspoon baking powder

1/2 teaspoon salt



Topping



2 packages (8 ounce each) cream cheese, softened

2/3 cups sugar

1 can (8 ounce) pineapple tidbits

1 ripe banana, sliced

1-2 cups fresh strawberries, halved

1/4 cups chopped pecans, toasted

1 square (1 ounce) semisweet chocolate

1 tablespoon butter (no substitute)



In a large bowl, combine shortening, butter and cocoa. Stir in sugar, eggs and vanilla. Combine flour, baking powder and salt; stir into the egg mixture. Spread evenly over a well greased 12-14 inch pizza pan. Bake at 350 degrees for 20-25 minutes. Cool. In a mixing bowl, beat cream cheese and sugar until smooth; spread over brownie crust. Drain the pineapple, reserving juice. Dip banana slices in juice, then discard juice. Arrange banana slices, pineapple and strawberries over cream cheese layer; sprinkle with pecans. In small saucepan over low heat; melt chocolate and butter. Drizzle over top of pizza. Chill for 1 hour. Refrigerate any leftovers.
