Earthquake cake (brownie texture):

~1C. coconut

~1c. finely chopped pecans or walnuts

~1 pkg german choc. cake mix (with or without pudding)

~1 1/3 water

~1/2 c. vegetable oil

~3 large eggs

~8T. butter, melted

~1 pkg. cream cheese (8 oz) at room temp

~4 cups of confectioners sugar, sifted

Place rack at center of oven and preheat at 350. Lighly spray 9x13 pan with pam.

Scatter nuts and coconuts in the bottom of prepared pan.

Combine cake mix, water, oil, and eggs in large bowl. Blend with electric mixer, low, for 1min. Scrape down sides, mix on med. speed for 2-3 mins more. Scrape down sides if needed. The batter should look well combined. Pour the batter over the cocnut and nuts in the pan, smoothing it out with a rubber spatula.

combine melted butter, cream cheese, and confectioners sugar in a large bowl. Blend with electric mixer on low for a min. The texture should look smooth. With a large spoon, place 12 large globs of topping on top of the cake batter, distributing them well. Place the pan in oven.

Bake until center jiggles a little when you shake the pan, 40-45 mins. Don't overbake because cake sets as it cools. Cool cake in pan for 30 mins. Cut into squares and flip them onto plate so the nuts and coconut are on top.</font>

Hope this helps...I have more!
