| 1/4 cup unsslated margine, softened
1/2 cup sugar (regualr or diabetic)
1 cup all-purpose flour
3/4 cup whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ground cloves
1/2 cup unsweetened prune junice
1/3 cup water
1 cup chopped cooked prunes
1/2 cup egg substitute
Preheat oven to 350 degrees. Spray baking pan, 13x9x2 inches, with vegetable spray.
Cream margarine and sugar thorughly. Mix flours, soda, salt, cinnamon, nutmeg, and cloves alternatley with prune juice and water. Stir in prunes.
Beat egg substitute with rotary beater 2 minutes. Fold into batter. Spread in pan.
Bake at 350 for 35-40 minutes, until wooden pick inserted in center comes out clean. Cool for 30 minutes. Cut into bars, 2 1/2x 1 1/2 inche |
