Default Chocolate, Cream Cheese & Coconut Week

What a combination huh? Yummy! [img]images/smiley_icons/oh yes.gif[/img] Anyone have any good recipes that take at least a combination of 2 of these ingredients or all 3? Here's a few to start the week off.





Coconut Chocolate Cake (for a potluck or large gathering)



2 cups all-purpose flour

2 cups sugar

1 teaspoon baking soda

1/2 teaspoon salt

1 cup butter or margarine

1 cup water

1/4 cup baking cocoa

2 eggs

1/2 cup buttermilk

1 teaspoon vanilla extract



Topping



1 can (12 ounces) evaporated milk, divided

1-1/4 cup sugar, divided

20 large marshmallows

1 package (14 ounces) flaked coconut

2 cups slivered almonds, toasted, divided

1/2 cup butter or margarine

1 cup (6 ounces) semisweet chocolate chips



In mixing bowl, combine flour, sugar, baking soda and salt. In a saucepan, combine butter, water and cocoa. Cook and stir until butter is melted; add to dry ingredients. Combine eggs, buttermilk and vanilla; add to chocolate mixture and mix well. Pour into a greased 15x10x1 baking pan. Bake at 350 for 20-25 minutes or until a toothpick inserted comes out clean. Meanwhile, in a saucepan, combine 1 cup evaporated milk, 3/4 cups sugar and marshmallows; cook and stir until marshmallows are melted. Remove from heat; stir in coconut. Immediately sprinkle 1 cup almonds over cake. Spread coconut mixture over top of cake. Sprinkle with remaining almonds (pan will be full). In a saucepan, combine butter with remaining milk and sugar. Cook and stir until butter is melted. Remove from heat; stir in chocolate chips until melted. Drizzle over almonds. Cool completely. Makes 35 servings.

Coconut Granola Bars



3/4 cup packed brown sugar

2/3 cup peanut butter

1/2 cup corn syrup

1/2 cup butter or margarine, melted

2 teaspoons vanilla extract

3 cups old-fashioned oats

1 cup (6 ounces) semisweet chocolate chips

1/2 cup flaked coconut

1/2 cup sunflower kernels

1/3 cup wheat germ

2 teaspons sesame seeds



In a large bowl, combine brown sugar, peanut butter, corn syrup, butter and vanilla. Combine the remaining ingredients; add to peanut butter mixture and stir to coat. Press into 2 greased 13x9 baking pans. Bake at 350 for 25-30 minutes or until golden brown. Cool on wire racks. Cut into bars. Makes 3 dozen

Cookies'n'Cream Brownies







Cream Cheese Layer:



1 package (8 ounces) cream cheese, softened

1/4 cup sugar

1 egg

1/2 teaspoon vanilla





Brownie Layer:



1/2 cup butter or margarine, melted

1/2 cup sugar

1/2 cup packed brown sugar

1/2 cup baking cocoa

2 eggs

1/2 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon vanilla extract

12 cream filled chocolate sandwich cookies, crushed



In a small mixing bowl, beat cream cheese, sugar, egg and vanilla until smooth; set aside. For brownie layer, combine butter, sugars and cocoa in a large bowl; blend well. Add eggs, one at a time, beating well after each. Combine flour and baking powder; stir into cocoa mixture. Stir in the vanilla and cookie crumbs. Pour into a greased 11x7x2 baking pan. Spoon cream cheese mixture over batter; cut through batter with a knife to swirl. Bake at 350 for 25-30 minutes or until a tooth pick inserted near the center comes out with moist crumbs. Cool completely. Makes 2 dozen

<font color="blue">Upside Down German Chocolate Cake

1 box German Chocolate Cake mix

1 cup shredded coconut

1 cup chopped pecans

1 stick margarine

1 (8-ounce) package cream cheese

1 box powdered sugar

Mix cake mix as directed on box. Sprinkle coconut and pecans on bottom of a greased 9x13-inch pan. Pour about one-half of the batter over coconut and pecans. In saucepan, melt margarine and cream cheese. Then add powdered sugar. Mix. Spread or drizzle this mixture over cake batter, top that with remaining half of the cake batter. Bake at 350° for 30-40 minutes or until done (leaves sides of pan).</font>

<font size="3"><font color="deeppink">Chocolate Pie

(<font color="limegreen">makes 1 pie</font>)

1 C sugar

¼ C cocoa

¼ C flour

3 eggs, separated

2 C milk (<font color="limegreen">I use evaporated</font>)

1 t vanilla

¼ C margarine

Mix cocoa, sugar, &amp; flour together whisk egg yolks with a small amount of milk then add milk and egg yolk mixture to dry ingredients. Cook on stovetop in a double boiler or I prefer cooking it in the microwave. Microwave on high for 2-3 min. then stir repeat this until it begins to thicken then do it for 30-45 sec. at a time. This should be a pudding like consistency. Stir in vanilla &amp; margarine. Top with meringue.</font>



<font color="limegreen">Meringue

3 egg whites

Whip until soft peaks form. Continue whipping and add;

1/3 C sugar

and whip until stiff peaks form. Top pie with meringue brown in an oven at 375 degrees.



Both of these recipes can be doubled without any problems.</font>

<font color="limegreen">Mississippi Mud Cake

2 Cups Sugar

1 Cup shortening

4 eggs

1 &amp; 1/2 Cups self-rising flour

1/3 Cup cocoa

1 teaspoon vanilla

1 Cup chopped nuts, optional

2 Cups miniature marshmallows

Cream sugar &amp; shortening together then add the rest of the ingredients <font color="red">except marshmallows</font>.....mix well. Bake at 350F for 30 minutes(cake will still be slightly uncooked). Remove from oven &amp; add marshmallows. Cook 10 more minutes. Don't worry if it falls in the middle.....that's fine! </font>



<font color="blue">Frosting

1/2 Cup evaporated milk

1 &amp; 1/2 sticks margarine, softened

1/3 Cup cocoa

1 lb box powdered sugar

1 teaspoon vanilla

1 Cup chopped nuts, optional

Mix all ingredients well, frost cake when cooled. Refrigerate after serving.

Angel Pie

8-oz. cream cheese, softened

1 can condensed milk

Whip together til smooth; fold in 16-oz. cool whip.

7- oz. flaked coconut

½ C pecans

Brown in 2 T butter in a skillet stirring until toasted being careful not to burn.

(I brown in oven until toasted. Watch carefully! Stir once or twice, it doesn’t take long.)

2- graham cracker crust

Layer top mixture in the crusts. Sprinkle with bottom mixture. Make 2 layers

in each crust. Drizzle with caramel ice cream topping over both pies.

Refrigerate.

Makes 2 pies. Each pie serves 8.
