| What a combination huh? Yummy! [img]images/smiley_icons/oh yes.gif[/img] Anyone have any good recipes that take at least a combination of 2 of these ingredients or all 3? Here's a few to start the week off. Coconut Chocolate Cake (for a potluck or large gathering)
2 cups all-purpose flour
2 cups sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter or margarine
1 cup water
1/4 cup baking cocoa
2 eggs
1/2 cup buttermilk
1 teaspoon vanilla extract Topping
1 can (12 ounces) evaporated milk, divided
1-1/4 cup sugar, divided
20 large marshmallows
1 package (14 ounces) flaked coconut
2 cups slivered almonds, toasted, divided
1/2 cup butter or margarine
1 cup (6 ounces) semisweet chocolate chips
In mixing bowl, combine flour, sugar, baking soda and salt. In a saucepan, combine butter, water and cocoa. Cook and stir until butter is melted; add to dry ingredients. Combine eggs, buttermilk and vanilla; add to chocolate mixture and mix well. Pour into a greased 15x10x1 baking pan. Bake at 350 for 20-25 minutes or until a toothpick inserted comes out clean. Meanwhile, in a saucepan, combine 1 cup evaporated milk, 3/4 cups sugar and marshmallows; cook and stir until marshmallows are melted. Remove from heat; stir in coconut. Immediately sprinkle 1 cup almonds over cake. Spread coconut mixture over top of cake. Sprinkle with remaining almonds (pan will be full). In a saucepan, combine butter with remaining milk and sugar. Cook and stir until butter is melted. Remove from heat; stir in chocolate chips until melted. Drizzle over almonds. Cool completely. Makes 35 servings.
__________________________________________________ Coconut Granola Bars
3/4 cup packed brown sugar
2/3 cup peanut butter
1/2 cup corn syrup
1/2 cup butter or margarine, melted
2 teaspoons vanilla extract
3 cups old-fashioned oats
1 cup (6 ounces) semisweet chocolate chips
1/2 cup flaked coconut
1/2 cup sunflower kernels
1/3 cup wheat germ
2 teaspons sesame seeds
In a large bowl, combine brown sugar, peanut butter, corn syrup, butter and vanilla. Combine the remaining ingredients; add to peanut butter mixture and stir to coat. Press into 2 greased 13x9 baking pans. Bake at 350 for 25-30 minutes or until golden brown. Cool on wire racks. Cut into bars. Makes 3 dozen
_________________________________________________ Cookies'n'Cream Brownies Cream Cheese Layer:
1 package (8 ounces) cream cheese, softened
1/4 cup sugar
1 egg
1/2 teaspoon vanilla Brownie Layer:
1/2 cup butter or margarine, melted
1/2 cup sugar
1/2 cup packed brown sugar
1/2 cup baking cocoa
2 eggs
1/2 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon vanilla extract
12 cream filled chocolate sandwich cookies, crushed
In a small mixing bowl, beat cream cheese, sugar, egg and vanilla until smooth; set aside. For brownie layer, combine butter, sugars and cocoa in a large bowl; blend well. Add eggs, one at a time, beating well after each. Combine flour and baking powder; stir into cocoa mixture. Stir in the vanilla and cookie crumbs. Pour into a greased 11x7x2 baking pan. Spoon cream cheese mixture over batter; cut through batter with a knife to swirl. Bake at 350 for 25-30 minutes or until a tooth pick inserted near the center comes out with moist crumbs. Cool completely. Makes 2 dozen |
