Apple Crepes--Low Fat |

| The apples and cinnamon blend together to offer an appealing and delicious breakfast treat or ending to a meal.
Ingredients
1 package (12 oz.) STOUFFER'S® Harvest Apples, *
1 package (8-oz.) cream cheese, softened
1 can (14 oz.) low fat or fat free sweetened condensed milk
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
2 1/2 teaspoons chopped pecans, toasted
1 Crępes(Recipe Follows):
1 cup all-purpose flour
1/4 teaspoon salt
1 1/4 cups milk
2 large eggs
2 tablespoons butter, melted
Directions
THAW harvest apples in microwave at MEDIUM (50% power) 6 to 7 minutes.
BEAT cream cheese, sweetened condensed milk, and vanilla at medium speed with an electric mixer until smooth. Spread 1 tablespoon mixture down center of each Crępe; top with about 2 tablespoons harvest apples. Roll up, and place, seam side down, in a serving dish.
STIR cinnamon into remaining cream cheese mixture; dollop over filled Crępes, and sprinkle with pecans.
*9 prepackaged crępes may be substituted.
Crępes:
PROCESS all ingredients in a blender until smooth, stopping to scrape down sides. Cover and chill at least 1 hour.
COAT bottom of a 10-inch nonstick skillet with vegetable cooking spray, and place over medium heat until hot.
POUR 1/4 cup batter into hot skillet; quickly tilt skillet in all directions so batter covers bottom.
COOK 1 minute or until crępe can be shaken loose from skillet. Turn crępe over, and cook about 30 seconds. Place on a cloth towel to cool. Repeat procedure with remaining batter. Stack crępes between sheets of wax paper. Chill in an airtight container up to 2 days, or freeze up to 3 months.
