Devil's Chocolate Fudge Cake--Low Fat |

| 1 cup water
1/2 cup pitted prunes
3 egg whites
1 1/2 teaspoons vanilla
1 cup flour
1 tablespoon cornstarch
1 cup sugar
2 tablespoons sugar
3/4 teaspoon baking powder
1 1/2 teaspoons baking soda
1/4 teaspoon salt
2 1/2 cups powdered sugar
1/4 cup Baking Cocoa
1/4 cup milk
Directions
In a mixer bowl, combine water, pureed pitted prunes, egg whites, and vanilla; beat to blend thoroughly. Add flour, cornstarch, 1 cup sugar, 2 tablespoons sugar, baking powder, baking soda, and salt; mix completely. Spread the batter into a greased 9" square baking pan. Bake at 350 degrees about 30 minutes or until the center is set. Cool on a wire rack.
For frosting:
In a bowl combine powdered sugar, unsweetened baking cocoa, and milk; beat with an electric mixer at medium speed until smooth. Spread on the completely cooled cake. Cut into squares. |
