| Banana Pudding
11 oz. vanilla wafer
large bananas(I usually use 3 or 4)
C sugar
6 eggs or separate yolks
4T flour
4- C milk
2t vanilla
4T margarine
Mix together sugar, egg yolks, flour, and milk.
Stir over medium heat until boiling. Remove from heat.
Add vanilla. (I microwave for 5 minutes, stir, repeat, stir, microwave 3 minutes and stir. It is usually done then. If not microwave for a little while longer. Watch carefully.)
Layer bottom of a 9"x13" dish with vanilla wafers then bananas. Pour half pudding mixture over top.
Repeat for a second layer.
Top with meringue or whipped topping if desired.
Meringue
6 egg whites
½ C sugar
cream of tartar, if desired
Whip egg whites until soft peaks form. Gradually add sugar. Continue whipping until stiff peaks form. Brown meringue in 375F oven. |
