| Creamy Coconut Pie (My own recipe)
1 ½ C evaporated milk
1 C sugar
4 eggs, separated
¼ C flour
1 t vanilla
¼ C butter or margarine
1 C coconut
Mix sugar and flour together. Whisk egg yolks with a small amount of milk then add to flour and sugar with the rest of the milk. Whisk all this together well. This can be cooked in a double boiler on the stovetop, but I prefer the microwave. Microwave on high for 2-3 min., then stir. Continue to do this until it begins to thicken then cook for 30-45 sec. until thick enough. For one pie it takes about 6 minutes, make sure to stir often! Do not overcook!! It should be a pudding like texture. Stir in coconut, margarine & vanilla then pour into a baked 9" deep-dish pie crust.
This makes one pie. Recipe doubles well.
Meringue
4 egg whites
Whip until soft peaks form. Continue whipping and add;
1/3 C sugar
and whip until stiff peaks form. Top pie with meringue and sprinkle with coconut then brown in an oven at 375 degrees. |
