| A few years back I worked as a manager in a gluten free store for 3 1/2 years. Learned all about celiac disease and diets and what you can and can't have. We ordered flourless peanut butter cookies from a manufacturer and they were the best peanut butter cookies I ever tasted and I'm not on a gluten free diet. I looked for a recipe for these and found one. I then added chocolate chips to them also making them chocolate chip peanut butter cookies. You can use Hershey's or Nestle's chocolate chips. They were gluten free 2 1/2 years ago when I last worked there but double check to make sure. Here is the recipe.....my whole family loves them..... Flourless Peanut Butter Cookies 2 cups peanut butter
2 cups granulated sugar
2 eggs
2 tsp vanilla
Mix all together and drop on ungreased cookie sheets. (Roll into 1-inch balls and then flatten with a fork making criss crosses).
Add chocolate chips for peanut butter/choc. chip cookies.
Bake 9-11 minutes in a 350 degree oven.
Makes 40 cookies.
