Default Open face sandwhich snack

When my kids were growning up I kept a batch of this in the fridge pretty much all of the time. It is a quick, easy and fairly cheap snack for the kids when the get off the school bus ravenous. May not sound great, may not look great in the bowl but it is yummy!!!!

Grate or run through grinder:

1 can SPAM (the off brand stuff does not taste good to me or my kids)
1 pound velveta cheese
1 medium onion
add
1 can cream of chicken soup
mix well and refrigerate until you are ready to use. This will keep for about a weekand it goes a long way.

When ready to use, spread a thin to medium layer of the mixture on top or bottom of a hamburger bun and pop them in the broiler until cheese melts and is a nice golden color. My kids used to just pop them in the microwave until the cheese melts. I prefer the broiler method because they look better I guess, ha ha. (I use fancy buns for special occasions/parties and use these as appatizers)

We had a family party when my brother got out of jump school and for 16 people I made 96 of these open faced sandwhiches. I bet my little brother ate 20 of them all by himself!
