Peanut Butter Cups |

| Makes about 2-1/2 dozen.
Cups:
1 (11oz) package real milk chocolate chips
2 Tbl shortening
Or *use milk chocolate wafers (Wilton, etc)
Filling:
¼ cup butter or margarine
½ cup peanut butter
1 cup powdered sugar
3 or 4 teaspoons flour - Hold only use if mixture is too thin
30 mini paper cups (1-3/4 x 1-1/2 inch)
Melt chocolate chips and shortening over low heat, stirring until melted and smooth (3 to 5 min) or melt in microwave. *Or melt milk chocolate wafers in bowl of double-boiler on very low heat - stir till melted. If using mini paper cups, loosen cups from stack, but leave in stack to coat with chocolate for stability. Using a small paintbrush coat inside of cup evenly with about 1 teaspoon of melted chocolate (thick enough for stability), bringing chocolate almost to top of cup but not over edge.
In a saucepan combine peanut butter and butter. Cook over low heat till melted. Stir in powdered sugar and flour.
Press about ½ tablespoon filling into each chocolate cup.
Spoon about ½ teaspoon melted chocolate on top of filling, spread to cover.
Freeze for about 2 hours or until firm. Store in refrigerator.
Note- next time I make these I am going to add 1/2 to 1 tea vanilla extract. |
