| Damper is a great Aussie treat. It is simple and easy to make, and tastes absolutely wonderful, especially when eaten hot with honey or golden syrup.
Damper.
Preparation time: 25 minutes.
Cooking tome: 20 minutes.
Makes 1 Damper
Ingredients:
2 cups of self-raising flour
30g butter, cut into small pieces
1/2 cup milk
1/2 cup water
sesame seeds (optional)
1. Preheat oven to very hot (220 Degrees Celsius, 425F). Sift flour into a large bowl, add butter and rub in lightly with fingertips.
2. Combine milk and water, make a well in the centre of the flour and pour in liquid all at once. Mix quickly to a soft dough.
3. Turn onto a floured board (use self raising flour). Knead lightly and form into a 20cm round.
4. Place on a greased oven tray. Glaze with a little milk and sprinkle with sesame seeds.
5. Bake for 15 minutes. Reduce heat to moderately hot (190 degrees celsius, 375F). Bake for a further 5 - 10 minutes or until damper sounds hollow when tapped.
Serve the damper warm and buttered as an unusual meal accompaniment.
