| BERRY ICE CREAM
200g sugar
500ml cream
6 egg yolks
berries or fruit
whisk (remove the kisses first, egg yolks, and sugar untill creamy, add half of the cream that has been brought to simmering point. stir over double boiler till it coats the back of the spoon (much like custard does), then remove from the heat, and stir through the remaining cream. Puree fruit or berries, then push through a sieve, and stir in. Put on a lid or cover with cling wrap, and freeze untill the outside begins to firm, and beat with electric mixers, and freeze again, this time untill firm.
this is a christmas morning (which is boiling hot over here) special, we serve it with our pancakes.

FRUIT LEATHER
for those of you that still have sun!
put the fruit you desire (minus stones and pips) in to the whizzer(blender) and turn it into mush, spread this out in a thin layer on a FLAT non - porus surface ( stainless steel, glass,etc)
lay it out perfectly flat in the sun untill it is dry (using a cake coverer to keep out bugs.) this could take a day or two. scrape it up with a spatular into strips, and turn over for a final drying if underside is a bit sticky.
have fun experimenting, our fav is apple and kiwi or rasberry.

HOMEMADE CORN CHIPS
2 cups cornmeal
1 cup whole wheat pastry flour
water
sea salt
throughly mix together cornmeal and flour, stir in water very gradually till mix is of the right consistancy to roll. roll the dough on a lightly floured board with a lighty floured rolling pin, cut into 11/2 inch squares. heat about a quart of vegetable oil in a deap fryer. drop the squares a few at a time into the hot oil and fry untill golden. drain on paper towling and sprinkle with a little salt.
Serve with your favorite dip or just by themselves. |
