Default Caramel Popcorn

This has always worked for me

(officially its called butterscotch popcornbut we always call it caramel, and it tastes like caramel to us!)



Popcorn

125g (4oz) butter

2 tblespns honey

3/4 cup sugar



make up popcorn. Combine honey, sugar and butter in a pan, stir over low heat until sugar disolves, slowly bring to the boil, and boil for 5 mins.

Pour syrup over popped corn and mix well, until corn is coated. Pour quickly into a greased oven tray, and cool. And Bobs your uncle!!

Here's one for Popcorn Balls & one for Kettle Korn. I'll look for a caramel popcorn recipe for you.



Here is one for popcorn balls:



Ingredients

4 to 6 qts. popped popcorn

2 c. sugar



1 c. white corn syrup



1/2 c. margarine



1 tsp. salt





Directions

Cook sugar, syrup, margarine and salt in a heavy kettle on medium high on stove top burner. Bring to a boil and boil 2 minutes, stirring the whole time. Put popped corn into a large heat proof container and stir in hot syrup. Toss lightly and evenly. Let cool just a few minutes. Dip your hands in ice water as you shape popcorn balls. This prevents sticking and burning your hands! Place balls on wax paper to harden. Reshape as needed.



Here is one for Kettle Corn:



Kettle Korn



3 tablespoons vegetable oil

3 tablespoons granulated sugar

Pinch of salt

1/2 cup popcorn



Heat oil and add popcorn, sugar and salt. Keep stirring until popping starts. Cover. Keep shaking the pan CONSTANTLY until popping has stopped.
