Being from Iowa, we always have to deal with the humidity when baking. I always have to add more flour in the summer. I just make the recipe the way it is written, then add about a tablespoon more flour. Then, I bake one or two cookies. If they are still flat, I add a little more flour, and back two more test cookies. I keep adding just a little flour at a time until I get the type of cookie I want. Sometimes it takes over 1/2 cup more flour. Now, I can follow the Toll house recipe, add about 1/4 cup more flour, and get great cookies. Just don't add too much, or they will be worse than the flat ones. Hope this helps!
